Tips for Making Wine with Grapes

As you contemplate the prospect of making your next batch of wine you will need to decide whether you want to use fruit, such as grapes, or packaged fruit juices. Packaged juices are known as concentrates and can be easily purchased online as well as in home brewing stores. There are many advantages to using concentrates, including the fact that they come with easy to follow directions and usually all of the extra ingredients you may need. Many novice winemakers feel that concentrates are a great introduction to the process of winemaking. There are also advantages to using fruit rather than concentrates; however. The main advantage to using fruit is that you have more control over the process, and thus the results, when you use fruits.

For the most part, the process of making wine from fruit is similar to making it using concentrates. There are a few differences; however, and those differences are critical.

Before you begin, you will need to make sure that you have plenty of fruit. It is not uncommon for many novice winemakers to think they have a sufficient amount of fruit when in fact they do not. You will need at least 70 pounds of grapes in order to produce six gallons of wine. This is the equivalent of about two bushels. The one exception to this is if you are using wild grapes such as Muscadine. In that case you will only need about 25 pounds of grapes due to the fact that wild grapes tend to have a stronger flavor as well as more acid.

Since you will be dealing with a large amount of grapes, you will need to make sure that you have sufficient facilities to deal with them properly. Before you are able to use them to make wine, you will need to remove the stems as well as crush the grapes. Later, the grapes will then need to be pressed after they have had a few days to ferment.

You can easily remove the stems as well as crush the grapes by hand. For small batches of grapes, you can use something as simple as a potato masher to crush the grapes; just make sure it has been cleaned and sanitized first. If you are dealing with larger amounts of grapes it may be worth it to go ahead and invest in a grape crusher as this will speed the process along.

As previously mentioned, after the grapes have fermented for a few days, you will need to press the pulp in order to extract as much juice as possible. In the event you are making white whine, the grapes will need to be pressed directly after they have been crushed but before the first fermentation.

When working with fruit rather than concentrate you will also need to have a hydrometer on hand in order to assist you in controlling the sugar level. As you may recall, this essential in determining the alcohol level in the final wine so it is a step that must not be overlooked.

An acid test kit may also be helpful in controlling and monitoring the levels of acid that are present in your wine when you are using fruit rather than concentrate. When the acid level in the wine is too high, the resulting wine will typically have a taste that is too sour or sharp. If there is not enough acid; however, the wine may taste somewhat flat. An acid test kit will provide you with accurate readings and help you to determine whether you need to add water or acid blend for balance.

There are some benefits to having a credit card that a great many UK consumers find appealing.  Some of the credit card companies offer cash back with purchases, air miles, travel insurance, and insurance for your purchases.  A credit card looks good to many UK consumers, especially when you add in the discount vouchers. 

When you decide to apply for a credit card, you should research all of your choices to find the one that is best for you.  Once you receive it, you need to be careful in using it or you could find yourself in a financial mess.  If you use your credit card wisely, then you will find that it will make your life easier, no matter what country you live in.

Tiramisu - The Italian Food Dessert

Today Tiramisu is the most popular of Italian food desserts.  It graces the menu of nearly every Italian food restaurant.  However, its rise to fame has been meteoric; it wasn't even invented until the 1970's in the Veneto region of Italy.  It didn't even gain widespread popularity until the early 1990's.  It is a unique blend of ingredients that separately seem to not go together at all.  However, when correctly blended together they form one of the treasures of Italian food.

The first ingredient is Mascarpone cheese.  This cheese has very deep roots in Italian food.  It was made as far back as the 13th century in the region of Lombardy.  This cheese is concentrated milk cream and has a very high fat content, getting up to seventy-five percent.  It is a smooth and creamy cheese.  Traditionally it has been considered to be more of a winter dish and therefore shows up in more of the seasonal Italian food dishes.  This is mainly because of its high calories and the fact that when it was first produced there was no refrigeration and this delicate cheese does not keep well in hot temperatures.  Like many other Italian foods, the best Mascarpone cheese comes directly from Italy.  However, it you're an Italian food lover making Tiramisu at home, there are plenty of makers of Mascarpone cheese in America.

The next ingredient is Zabaglione cream.  This is a true classic Italian food dessert.  It hails from the world renowned kitchens of Venice.  When it originally became a popular Italian food dessert it was made with yolks, honey, and a sweet Cyprus wine.  However, today the cream has taken on a new flavor.  To begin with sugar is substituted for the original honey.  The most stated difference in taste though, comes from the use of Marsala wine instead of the sweet Cyprus wine.  This cream can be made from home and is easier to make than most Italian food chefs let on.

The third ingredient is the most distinctive factor of Tiramisu, espresso.  This shot of caffeine is where the dessert gets its name, which means "pick me up".  This is a coffee that is true to Italian food and is much stronger than American coffee.  Espresso is the most important coffee in Italian food and can be seen following many Italian meals. 

The fourth and final ingredient is Ladyfingers.  These popular cookies originated in Italy and have made numerous appearances in not only Italian food, but in many other national cuisines.  These cookies are remarkably light due to the fact that the dough with which they are made is rich with whipped egg white.  They are immensely popular and one of the most appreciated Italian food desserts in Italy.

These four ingredients blended together just right and topped off with chocolate make an Italian food dessert that is as popular as the individual ingredients.  Make sure when you prepare this at home that you take great care in choosing the ingredients, it will really make a difference in the quality of Tiramisu.  Now that you know the correct quality and the origin of the ingredients you will surely impress your friends with you Italian food knowledge.

Tasty Crab Recipes You Can Enjoy On The Go

Hot and Creamy Crab Dip
What you need:
  • 1/2 kilogram jumbo lump crab, shell removed
  • 1 clove garlic, minced
  • 1 cup grated pepper jack cheese
  • 1 cup grated sharp cheddar cheese
  • 1 cup cream cheese, softened
  • 1/4 cup minced onion
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon hot sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
Using a hand mixer, beat together cream cheese, mayonnaise and sour cream in a bowl. Add the garlic, cheeses, onion, lemon juice, hot sauce, Worcestershire sauce, salt and pepper to the bowl and stir until all ingredients are well-combined. Fold in the crab. Transfer mixture to a baking dish and cook in a pre-heated oven (325F) until bubbling and golden brown, about 20 to 25 minutes. Serve with fresh vegetable slices, crackers or chips.
The Best Butter and Garlic Crab Legs
What you need:
  • 1/2 kilogram king crab legs, sliced in half to expose the flesh
  • 3 cloves garlic, minced
  • 4 tablespoons salted butter, melted
  • 1 tablespoon chopped parsley
  • 1/2 tablespoon lemon juice
  • Lemon slices
In a bowl, combine garlic, melted butter, parsley and lemon juice. Arrange the crab legs in a baking tray and drizzle with butter mixture. Reserve some of the mixture for dipping. Bake the crab legs in a pre-heated oven (375F) until heated through, about 5 minutes. Serve with dip and lemon slices - it's best to squeeze lemon juice over crab before consuming.
Delicious Baked Crab Crispy Sticks
What you need:
  • 12 spring roll wrappers
  • 1/2 cup cream cheese
  • 3 tablespoons chopped crab meat
  • 1/2 teaspoon granulated sugar
  • Sweet and sour sauce
  • Dash of salt
Combine the cream cheese, crab meat, sugar and sweet and sour sauce in a bowl. Season with salt and stir until ingredients are well-combined. Spoon about a teaspoon of the mixture in each spring roll wrapper and wrap. Spray a baking sheet with olive oil then arrange crab sticks on the sheet. Cook on a pre-heated oven (375F) for about 12 minutes or until crisp (turning once halfway through).
